How to use luminometers for emulsion stability testing studies

Emulsion is widely used in food, medicine, pesticide, chemical industry and other fields. A simple and rapid method for determining emulsion stability is a hot issue in the field of emulsion research. In this paper, the illuminometer method designed by myself is used to study the stability of petroleum ether-water emulsion system. The main research contents and achievements are as follows:

1. Design the emulsion stability measuring device with the illuminometer as the Detector. It can be used to measure the stability of oil-in-water (0/W) and water-in-oil (W/0) emulsions, and the measurement results are consistent with those of the Turbidity Meter, which shows that the designed device is reliable.

2. Established a method to evaluate emulsion stability by illuminance meter. The stability of the emulsion was evaluated according to the length of time for the sudden change of the light transmission intensity of the emulsion and the size of the half-life, and the stability time of the emulsion was estimated.

3. The stability of oil-in-water (0/W) and water-in-oil (W/0) emulsions prepared with Triton X-100 and SPAN-800 as emulsifiers were investigated respectively. Discuss the effects of mechanical stirring method, ultrasonic method, combined method (stirring and ultrasonic combination) and emulsification conditions on the stability of dairy industry. The experimental results show that for the oil-in-water (0/W) emulsion, the process conditions with better stability are: emulsification for 1515min, emulsification temperature of 30oC, ultrasonic power of 480W, emulsifier 1.000g The emulsion prepared is relatively stable, and the transmittance light mutation time It is 5400min and the half-life is 5600min. The water-in-oil (W/0) emulsion has better stability. The process conditions are: emulsification for 30 minutes, emulsification temperature of 30oC, ultrasonic power of 240W, and emulsifier of 1.000g. The emulsion is the most stable, and the stability time and half-life are 3500 and 4130 minutes respectively.

4. Explore the method of determining the stability of emulsion by the vertical scanning method of the illuminance meter. The effects of emulsification time, temperature, ultrasonic power and emulsifier concentration on emulsion stability were studied by vertical scanning method. The experimental results were consistent with those of fixed monitoring method. It provides the basis for the development of a rapid scanning device for the determination of emulsion stability in the future.
