How to operate and use the food oil quality Detector DT-70

1. Measurement

DT-70 can realize rapid continuous measurement, and the next measurement can be performed directly without waiting after one measurement is completed.

What kind of oil/grease can this instrument be used for?

In principle, all oils and fats used for frying can be measured. Vegetable oils such as canola oil, soybean oil, sesame oil, palm oil, olive oil and peanut oil, animal fats and oils can also be measured. Depending on the type of oil, the TPM value of fresh oil will fluctuate between several percentages, and the maximum use time of frying oil is also different. For example, fresh palm oil has a higher initial %TPM than other oils, but ages much more slowly than other oils.

1.1. The influence of additives

DT-70 is designed for measuring pure oil/fat products, if additives are used, the measured results may be biased.

1.2. Comparison with laboratory methods

Frying oil is a mixture of substances of different polarities. During frying oil aging, the amount of highly polar components increases. The chromatography column method in the laboratory can distinguish between polar and non-polar substances, and the content of polar components in the total components of frying oil is defined as % TPM value (total polar components).

The %TPM value measured by the chromatographic column method may change slightly due to the setting of the boundaries of polar components and non-polar components.

Depending on the type of oil, there may also be a slight change in the polarity of the polar and non-polar components, but this change cannot be discerned by chromatography.

On the other hand, the DT-70 can measure the entire polarity of the frying oil to get the actual polar and non-polar components. Therefore, in some measurements, the measured value of DT-70 may be higher or lower than that measured by the column method.

For example, coconut oil, the TPM value measured by DT-70 is higher than that of the chromatography column method. This oil is not suitable for deep frying, and is mainly suitable for short-term frying in pans.

Measurement

Free Fatty Acids (FFA)

The DT-70 measures the total amount of polar components in deep frying oils and fats to assess oil deterioration after deep frying. Free fatty acid is used to judge the aging degree of oil after long-term storage at room temperature, and this index is not suitable for judging the frying deterioration of oil.

The DT-70 is not used to measure free fatty acids.

Polymeric Triglycerides (PTG)

Polymeric triglycerides are increasingly used to assess frying oil quality. The measurement results of this method can be proportional to the %TPM value in most cases.

1.3. Start measurement

1. Press the Power button and release it, the instrument turns on

4. Press the HOLD button in the measurement mode to activate the HOLD mode

5. "HI" is displayed in the temperature column, indicating that the measured temperature is higher than the range.

6. "LO" is displayed in the temperature column, indicating that the measured temperature is lower than the range.

7. "H I " is displayed in the temperature column, indicating that the measured temperature is higher than the range.

8. "LO" is displayed in the temperature column, indicating that the measured temperature is lower than the range.

1.4. Please follow the following points in order to get the most correct results in the measurement

Please turn off the induction electric frying pan during the measurement, because the electromagnetic field will affect the measurement results. ·Please remove the fried food from the frying oil and wait for 5 minutes during the measurement.

Please clean the probe before each measurement or before the next continuous measurement,

Try to avoid letting the probe touch metal objects, such as frying baskets, pot walls, because these things may affect the measurement results, and the minimum distance from metal objects should be at least 1cm on each side.

Uneven oil temperature in the frying oil may cause wrong measurements, please stir the instrument in the frying oil.

If the measurement is suspected to be wrong because it contains water: repeat the measurement after another 5 minutes (do not fry during this time, keep the fat hot). If the new reading is low, take another measurement after 5 minutes until the reading stabilizes.

Please replace the frying oil when it reaches 24% TPM, different countries have different limit values, please be sure to change the frying oil before reaching the limit value.

We recommend that you wear a hand strap when using the instrument to prevent the instrument from slipping.

2. Configuration mode

1. Turn on the instrument and press and hold [Hold] and [<] at the same time for at least 3 seconds when the instrument is in the standby mode. - °C or F lights up in the display.

2Use [<] or [>] to set the temperature unit (c/F).

3. Press [Hold] to confirm the set temperature unit. -Display ALA and on or off.

4. Press [<] or [>X] to turn on (on) or turn off the buzzer alarm.

5. Press [Hold] to confirm.

- OFF and on or off light up in the display.

6. Press [●<] or [>] to turn on or off Auto Hold.

7. Press [Hold] to confirm.

- Bright LED and on or off in the display.

8. Press [<] or [>] to turn on or off the LED indicator.

9. Press [Hold] to confirm.

- CAL and on or off light up in the display.

10. Press [<] or >] to turn on or off to enter the calibration mode.

11. Press [Hold] to confirm.

- BL and on or off light up in the display.

12Press [●<] or [>] to turn on or off the backlight.

13. Press [Hold] to save and exit.

4. Set high-low alarm

5.1. Set TPM alarm upper limit

1. Turn on the instrument and press [<] for at least 3 seconds in the standby mode, the instrument will enter the high alarm setting

2. Then click or long press [][>] to set the printing value

3. Click [Hold] or [Power] to save and return

5.2 Set TPM alarm lower limit

1. Turn on the instrument and press [>] for at least 3 seconds in the standby mode, the instrument enters the low alarm setting

2. Then click or long press [<], [>] to set the printing value

3. Click [Hold] or [Power] to save and return

5. Clean the sensor

Risk of burns if the instrument overheats (probe and probe shaft)!

  • Do not touch hot parts on the instrument.

  • Allow the instrument to cool down sufficiently before cleaning.

  • If you get burned, wash the wound with cold water immediately and see a doctor if needed.

  • Use weak detergent, standard water or soapy water to clean.

  • Gently clean the probe with a soft paper towel, or rinse it in clean water.

  • Carefully dry the probe with a soft paper towel.
